Double distillation takes place over
two weeks as the agave sap is transformed
into the smoldering volcano from which
the liquor gets its name. The "heads" (the
earliest distillates in the process) and the
"tails" (the last bits in the process) are
discarded along with the harsh qualities
they contain.
