Mexican Mermaid
Per serving:
1 triangular chunk of fresh pineapple, generously dusted with sparkling colored-sugar crystals.
1 ounce premium silver tequila, chilled
dry and fruity champagne, chilled
splash of blue Curacao
long twist of lime peel, preferably spiral cut
::INSTRUCTIONS::
Attach sugar-coated pineapple chunk to the rim of a champagne flute glass. Add tequila and fill the glass with champagne, adding the blue Caracao and a spiral of lime peel, and serve immediately. Tell guests to drop the pineapple chunk into the drink for an added splash of bubbles.
